Shredded Beef Enchilades
Tender, slow-cooked beef, smothered in rich enchilada sauce, rolled in warm tortillas, and baked to perfection, these enchiladas are a mouthwatering delight that will transport your taste buds south of the border.

Ingredients

  • Olive oil
  • (1) Chuck Roast
  • (1 package) taco seasoning (we love Siete)
  • (1 28 oz can) enchilade sauce
  • (8-12) flour tortillas
  • (8 oz) shredded mild cheddar cheese

Directions

  1. Drizzle a little olive oil in your pressure cooker or slow cooker.
  2. Add one 1902 Legacy Meats Chuck Roast and sprinkle generously with your favorite taco seasoning—we love Siete.
  3. Pressure cook for 75 minutes, then allow the pressure to release for 10-15 minutes naturally (orn slow cooker for 8-10 hours on low) 
  4. Shred the meat in the cooker once done.
  5. Preheat the oven to 350°F.
  6. Pour a little enchilada sauce into the bottom of a 9x13 baking dish.
  7. Fill each tortilla with shredded beef and a sprinkle of cheese, roll it up, and place seam-side down in the dish.
    Pour the remaining enchilada sauce over the top and cover with more cheese.
  8. Bake for 30 minutes, or until the enchiladas are hot and bubbly.
