Sausage and Potato Breakfast Casserole
Loaded with savory, spicy sausage and melty cheese, this hearty casserole is the ultimate comfort breakfast that's sure to steal the show at any morning gathering.

Ingredients

  • (2 lbs) Hot Pork Sausage
  • (1 bag (30-32 oz)) frozen tater tots
  • (1 tsp) salt
  • (1/2 tsp) pepper
  • (1/4 tsp) garlic powder
  • (1/4 tsp) onion powder
  • (1 1/2 cups) shredded cheddar cheese
  • (1/2 cup) Monterey jack cheese
  • (8) eggs
  • (2 cups) milk

Directions

Preheat the oven to 350ºF and lightly grease a 9×13-inch pan.

In a large skillet, cook the sausage until browned and no longer pink; drain the fat.

In a large bowl, mix together the potatoes, cooked sausage, and both cheeses, then spread evenly in the prepared pan.

In another bowl, whisk together the eggs, milk, salt, pepper, garlic powder, and onion powder, then pour over the potato tot mixture.

At this point, you can cover and refrigerate to bake later.

When ready, bake uncovered for 60–70 minutes, or until the eggs are fully set.
