Katie's Tri Tip

Tri Tip is perfect grilled Santa Maria style! The spicy dry rub marinades over night and then is basted with a garlic vinegar mixture that is to die for!
Ingredients
- (2 t) Salt
- (2 t) Fresh Ground Pepper
- (2 t) Fresh Rosemary
- (1/2 t) Cayenne Pepper
- (2 t) Garlic Powder
- (1 t) Onion Powder
- Tri Tip
- (1/3 cup) Olive Oil
- (1/3 cup) Apple Cider Vinegar
- (6 cloves) Fresh Garlic
- (1 t) Dijon Mustard
Directions
- Mix the salt, pepper, rosemary, cayenne pepper, garlic powder, and onion powder in a small bowl.
- Pat the Tri Tip down with a paper towel and rub the spice mixture on all sides of the meat. At this point you can let the spices marinade on the meat for 2 hours and up to overnight.
- Whisk together the olive oil, apple cider vinegar, garlic (minced), and mustard.
- Heat the grill to high.
- Place the tri tip on the grill and baste the top side.
- After 4-5 minutes flip the meat and baste the other side.
- After the meat sears place a piece of foil down on the grill and transfer the meat on top of the foil. This keeps the basting mixture from burning.
- Continue flipping and basting every few minutes for a total of 20-30 minutes or until the internal temperature reaches 125 degrees.
- Be careful not to overcook because the tri tip will continue cooking for a few minutes after removed from the grill.
- Slice in 1 inch strips and serve!
