Foil Pack Grilled Veggies

Foil Pack Grilled Veggies are the perfect side for any beef on the grill. Just make a large foil pack or use a foil baking dish and grill along side the meat!
Ingredients
- (1 large) Russet Potato
- (1 large) Sweet Potato
- (1/2 a head) Cabbage
- (1 medium) Onion
- (1) Yellow Pepper
- (1 1/2 cups) Broccoli
- (1 1/2 cups) Cauliflower
- (1t) Sea salt
- (1t) Fresh Ground Pepper
- (1t) Garlic Powder
- (1t) Dill
- (1t) Rosemary
- (1t) Sea Salt
- Olive Oil
- (3-4 strips) Bacon
Directions
- Chop the russet and sweet potatoes into cubes.
- Slice the cabbage, onion, and pepper into large chunks.
- Cut the broccoli and cauliflower into large florets.
- Dice the bacon.
- Toss all the veggies and bacon in a foil pan (or make a large foil pack with strips of heavy duty foil).
- Stir all the seasonings together in a small bowl and mix well.
- Drizzle the veggies with olive oil and sprinkle with the seasoning mixture, toss to coat.
- Cover the foil pan with foil (or wrap foil packet by folding twice on the top).
- When the grill is hot place the foil pan (or foil pack - seam side up) on the grill.
- Cook 25-35 minutes or until the veggies are fork tender.
- Serve along side a grilled 1902 Ribeye or TriTip.
You can substitute any veggie you have in your refrigerator for this recipe. Zucchini, asparagus, corn cobs, carrots, radishes, and so much more would be great! Clean out the refrigerator and it will be delicious!
