Crispy Beef Taquitos
Taquitos are a great snack or quick lunch for all your hungry family memebers! They can easily be frozen and warmed up in the oven!

Ingredients

  • (1 lb) Ground Beef
  • (1/2 small, chopped) onion
  • (3, seeded and diced) jalapenos
  • (3, minced) garlic cloves
  • (1 1/2 t) chili powder
  • (1 t) cumin
  • (1/2 t) smoked paprika
  • (1/2 t) salt
  • (1/4 t) oregano
  • (8 oz) cream cheese
  • (2 cups, grated) Pepper Jack cheese
  • (12) tortillas, medium

Directions

  1. Add beef, jalapenos, and onions in a large skillet and cook until meat is browed. Add garlic and saute for 30 seconds. Drain off extra fat. 
  2. Stir in seasonings, then add salsa and cream cheese. Heat until the cheese is melted, then add 1 cup of the pepper jack cheese. Remove from heat. 
  3. Add about a 1/4 a cup to the bottom third of a tortilla and top with a little of the leftover pepper jack cheese. Tightly roll up tortillas. 
  4. Heat a tablespoon of olive oil in a skillet over medium heat. Add 2 or 3 taquitos to the skillet and cook until golden brown on all sides. 
  5. Serve with salsa, sour cream, and guacamole!
