Cherry Charmer Cookies

Ingredients
- (3/4 cup) maraschino cherries, drained and chopped
- (2 1/2 cups) flour
- (1/2 cup) sugar
- (1 cup) cold butter
- (4 oz.) white chocolate chips
- (1/2 teaspoon) almond extract
- (2 tablespoons) maraschino cheery juice
- (8 oz.) vanilla almond bark
Directions
Preheat oven to 325 degrees; lightly grease baking sheets. In a large bowl, stir the flour and sugar together. Cut in the butter until the mixture resembles fine crumbs. Chop the white chocolate chips. Stir in the cherries and white chocolate chips. Add the almond extract and cherry juice to the dough.
Using a medium scoop, shape the dough into balls. Place on a cookie sheet. To flatten the cookies, use the bottom of a glass dipped in sugar. Flatten to 1/4 inch thick.
Bake for 12 minutes then remove from oven and let the cookies rest on the hot pan 6-7 minutes, transfer to a wire rack and cool completely.
Using a double broiler, melt the almond bark over low heat until smooth. Spoon a little of the white chocolate onto each cookie and spread to the edges. Let set to harden, then serve!
