This recipe is great to make in bulk. Store in the freezer for easy slow-cooking dinner on busy nights! Follow the meal prep recipe and then freeze or place it in your refrigerator for later in the week. Cooking instructions are simple, and the sauce flavors are delicious with the tender beef!
Directions
Beef and Broccoli Meal Prep
2 lb 1902 Legacy Meats steak, thinly sliced (flank, filet, sirloin, or skirt are best)
½ cup beef broth (or make your own with beef shanks!)
1/2 cup soy sauce
1/3 cup brown sugar
1 tablespoon minced garlic
1 tablespoon sesame oil
2 tablespoons cornstarch
2 cups frozen broccoli florets
- Slice the steak thin and place in a large plastic bag.
- Add the broth, soy sauce, brown sugar, garlic and sesame oil to the bag. Seal and massage the meat.
- Add cornstarch to a small bag and seal.
- Lable a large plastic bag Beef and Broccoli.
- Place the frozen broccoli in the bottom of the labeled bag, then place the cornstarch bag and marinated beef bag on top.
* If not freezing these will keep in the refrigerator for 2-3 days.
Beef and Broccoli Cooking Instructions
For best results, remove the meal from the freezer and thaw it in the refrigerator for 24 hours. You can also thaw on the countertop for 4-6 hours. The longer the better so the meat will marinate.
- Put the sliced beef in the bottom of the crock pot. Cook on low for 5-6 hours.
- Remove 1/4 cup of the sauce from the crock pot and mix with the 2 tablespoons of cornstarch. Stir back into the Crock-Pot. Add the broccoli, stir again, and cook for another half an hour.
- Serve over rice and enjoy!
