Our Quarter Cow Share takes up about 3 cubic feet and includes:
- 3 New York Strip (2/pkg - 1.25 in cut)
- 2 Bone-in Ribeye (2/pkg - 1.25 in cut)

- 2 Filet (2/pkg - 2 in cut)
- 1 Flank steak

Our Half Cow Share takes up about 9 cubic feet. You can expect about 195 + lbs of beef, consisting of 20-25% steaks, 20-25% roasts, 40-45% ground beef, and 10-15% of other cuts that are all labeled and put in a high chill freezer.

Our Whole Cow Share takes up about 16 cubic feet. You can expect approximately 350 + lbs of beef, consisting of 20-25% steaks, 20-25% roasts, 40-45% ground beef, and 10-15% of other cuts that are all labeled and put in a high chill freezer. *Cows do vary in size, so the number weight may vary.

Your beef is processed at a small, family-owned processor (Scott Cattle) in El Reno, Oklahoma. Their newly built facility includes modern technology to vacuum seal and flash freeze your beef after the skilled butcher's hand-cut the meat.

Our butcher's vacuum packaging removes all the air before sealing the package. Your beef will last 2-3 years with this type of seal! However, some of our cuts with bones (bone-in steaks, knucklebones, soup bones) are harder to seal and occasionally break the packaging, and these cuts should be used first.

Yes! Our beef hangs in a humidity-controlled environment for two to three weeks before being made into cuts. This allows the steak to develop a deep flavor and is far more tender than fresh steaks.

Our butcher does not grade the beef. Most of it would grade choice with some select if it were graded.

You can plan on about 1 cubic foot per 30 lbs of beef. This is about 3 cubic feet for a Quarter, 9 for a Half, and 16 for a Whole Cow Share.

If you order a Whole or Half Cow Share, you can have it cut to your preference! After your deposit is paid, the butcher will call you to walk you through the cutting order.
If you order a Quarter CowShare, it will be cut with pieces from both the front and hindquarters. The complete list of cuts can be found in the product description.
